Reading the leaf before the first sip

From the tea table

Tea begins as a leaf, and the leaf still offers clues long after harvest. Colour, texture, twist and how it responds to water are all worth observing.

There is no need to turn tasting into a test. Looking carefully simply creates another way to appreciate the craft before aroma and flavour take over.
